- Cooking Spray
- 8 slices of bacon, cut into 2" pieces
- 3/4 cup minced onion
- 1 cup uncooked instant rice
- 8 cups shredded green cabbage
- 1 1/2 lbs. lean ground beef
- salt and pepper to taste
- 16 oz. low sodium tomato sauce
- 1/4 cup ketchup
- 3/4 cup water
Instructions:
1. Preheat oven to 400 degrees.
2. Spray a 9x12 casserole dish with cooking spray.
3. Spread 4 of the 8 cups of cabbage along the bottom of the dish.
4. Cook the bacon until crisp, and set aside.
5. Add onions and rice to the leftover grease in the used bacon pan.
6. Cook until the onions are transparent, and the rice is slightly browned.
7. Spread the rice/onion mixture over the cabbage in the casserole dish.
8. Brown the ground beef in the bacon/onion/rice pan.
9. Add the cooked beef to the casserole dish.
10. Add the remaining cabbage to the top of the beef in the casserole dish.
11. Add the tomato sauce, water, salt, and pepper to the previously used pan.
12. Pour the sauce over the casserole, ensuring it doesn't overflow.
13. Top with previously cooked bacon.
14. Cover with foil and bake for 45 minutes.
15. Uncover and cook another 10 minutes.
16. Serve and enjoy!
